The "Hautes-Côtes" (High Slopes) offer a cooler, more athletic profile of Pinot Noir. This 2021 expression from Domaine Digioia-Royer is defined by its vibrancy and precision. It is an energetic, "bright" wine that perfectly captures the limestone purity of the Nuits sub-region.

Appearance - A clear, shimmering ruby red.
Nose - High-toned aromas of redcurrant, pomegranate, and wild rose petals, with a faint, stony mineral streak.
Palate - Zesty and light-footed. The palate is dominated by "crunchy" red fruits and a refreshing acidity that makes the mouth water. It finishes clean with very fine, delicate tannins.
Pairings - Sashimi, Yakitori, Chawanmushi.
