The Golden Slope of the Côte Chalonnaise
Domaine Faiveley is one of Burgundy’s most storied producers, and their "Le Vallon" parcel in Mercurey is a hidden gem for those seeking the weight and pedigree of the Côte d’Or without the steep price point. The 2023 vintage captured the sun-drenched generosity of the region, producing a Chardonnay that is both opulent and remarkably precise. This specific vineyard site sits on a steep, south-facing slope with clay-limestone soils, yielding a wine with a distinct broadness and a sophisticated, polished texture.
Appearance - A brilliant, pale gold with shimmering green reflections.
Nose - A rich and harmonious bouquet. Uplifted aromas of ripe yellow peach and acacia honey are layered with complex notes of toasted hazelnut, lemon curd, and a subtle, integrated hint of vanilla bean from careful oak aging.
Palate - Medium-to-full-bodied with a beautifully rounded, creamy mouthfeel. The 2023 vintage offers a dense core of tropical and orchard fruits, expertly balanced by a thread of fresh acidity that keeps the palate lively. It finishes with a remarkable persistence, leaving a trace of savory spice and a clean, mineral lift.
Pairings - Gindara Saikyo Yaki, Teppan Live Boston Lobster, Foie Gras with Caramelised Apple, Iberico Pork with Yuzu, Wagyu Teppanyaki.
Service - Serve at 12–13°C. Unlike a leaner Chablis, this Mercurey Blanc shines when served slightly warmer to allow its buttery texture and toasted aromatics to fully expand. This is a structural white wine that will benefit from 20 minutes of air to reveal its full aromatic complexity.
