The Benchmark of Dry Creek Valley
Lytton Springs is more than just a wine; it is a piece of California’s viticultural DNA. Unlike many Zinfandels that focus purely on sweetness, the 2021 Lytton Springs is defined by its "earthy" complexity and structural "grip." The inclusion of ancient-vine Petite Sirah and Carignane adds a layer of dark fruit and spice that makes this wine feel remarkably substantial and sophisticated. It is the "darker" side of Ridge. Intense, brambly, and deeply satisfying.
Appearance - Opaque, deep purple with a midnight core.
Nose - A brooding and powerful bouquet. Saturated aromas of blackberry, black plum, and blueberries are accented by savory notes of black pepper, iron-rich earth, and toasted sage.
Palate - Full-bodied and muscular. The "old vine" concentration provides a dense, chewy texture filled with dark berry fruit and cocoa. The finish is long and persistent, featuring firm tannins and a refreshing acidity that keeps the power in perfect check.
Pairings - Beef Kushiyaki, Unagi Kabayaki, Iberico Pork with Yuzu, Beef Teriyaki.
Service - Serve at 17–18°C. The structure of Lytton Springs benefits from being served at a true "cellar temperature" to let the savory spice lead. We highly recommend decanting for 60 minutes to soften the Petite Sirah tannins and unlock the dark fruit.
